The Friday Five

Is it Friday already? This week seriously just flew by! Love it when that happens! Here is this week’s Friday Five.


1. Last night for dinner I created my first Clean Eating meal from scratch without a recipe! My son had made a request earlier in the week for chicken, broccoli, and corn & peas. I guess all of my Clean Eating magazine recipes were just a little too creative for him (although he loved and ate them all) and he was craving some basic, comfort food. I didn’t want to just bake a plain old chicken breast, so I took a look in the fridge to see what I had on hand and just started cooking! In the end I made chicken stuffed with spinach and ricotta. I know this is not a brand new creation, but it’s the first time I’ve ever made it and I didn’t use a recipe. I just eyeballed everything and threw in whatever I thought would taste good – which in the end turned out to be green onions, garlic, spinach, sun-dried tomatoes, and S&P. I think I did a pretty good job, if I do say so myself!

I didn’t have enough broccoli to feed all four of us, so I added some cauliflower too and roasted them in the oven. Man, roasted veggies are soooooo good! In the end, the dinner was a success and got a thumbs up from Jacko!


2. Club soda with lots of ice has become my new favourite cold drink (aside from Corona, of course!) A nice tall glass of club soda with ice and sometimes a little shot of Mio water enhancer has become my new 3pm treat at work. I don’t even miss Diet Coke anymore!

3. I did some scrapbooking today! I know this may not seem very exciting, or Friday Five worthy, but the fact that I actually scrapped a page today is a big deal. I am so far behind in my scrapping, it’s not even funny. Scrapping more was one of my big goals for last year and I failed miserably. It just seems that life is so busy, there just isn’t time to scrap…or if there is time, something always seems to come along and bump my scrap time. Today I left work early so I could take my son out for lunch after he wrote an exam. After lunch we came home and aside from writing this post and maybe squeezing in a workout (which isn’t going to happen today), I didn’t have anything to do. So, I poured myself an nice tall glass of club soda with ice and headed up to my office/scrap room. After spending a bit of time putting all the crap that seemed to collect on my desk away, I flipped through a few of my scrapbooks and found the pages that needed titles or finishing touches and planned out what I would do. In the end, I made the title page to one of our family albums. I hate making title pages, so most of the time skip them. There’s just too much pressure when making the title page and I’m really not all that creative so it takes me a long time to come up with ideas of what to do. Today I cheated a bit and hit Pinterest in search of title page ideas. I found one that I could scrap-lift and in the end I’m quite pleased with how it turned out. Simple, but nice. You can see the original that I copied from on my iPad in the background.

4. I need to start running again soon. The GoodLife Fitness Toronto Half Marathon is 99 days away! Aside from a few runs to get my legs ready for the Resolution Run on New Year’s Eve, I haven’t really run at all since the Niagara Half back in October. I’m going to try to run twice a week, just short runs, until the middle of February when I’ll start an actual training schedule. I’d really like to do a 10 week training schedule, but will probably end up with a 12 week schedule, since those are what I have on hand. I just find by the time the race gets here I’m getting a bit tired if running. Hopefully I will get to train with my sister again for a lot if the runs, because running by myself SUCKS. I think that is a big part if why I don’t really love running. I’m not very good at it and if I’m out there alone for lots of miles it’s really tough. When I run with my sister, it seems easier – which I’m guessing is due to the fact that we chat the whole time we are running. It makes the time go by faster…and that’s definitely a good thing when the mileage starts to creep up!

5. I am very curious about CrossFit. I’m reading more and more blog posts, and seeing more and more WOD pics on Pinterest that talk about CrossFit. It just sounds like such an amazing workout. I’m pretty sure I wouldn’t be able to do many of the exercise they do there, but it sounds like the encouragement you get from the coaches and other members is so helpful you can’t help but improve. This post from Lindsay from The Lean Green Bean makes it sound like the best place to workout and get stronger. There is a CrossFit in my town, and if I can squeeze it in, I might go check it out this weekend.

Recipe Roundup

I am quite happy to say that today was a pretty good day food-wise. 

Yesterday’s breakfast was so good, I had pretty much the same thing today (minus the blackberries, since I ate them all yesterday).  Lunch was not the best – well, it was delicious, just not the “cleanest”.  I had to go to the mall to deal with some cell phone stuff for my company, so my colleague and I ate at Il Fornello.  It was $10 pizza day.  I had a thin crust Diavolo pizza…spicy saprosetta, hot chili peppers, black olives and basil…totally delicious, and I enjoyed every bite.

Dinner was another new Clean Eating magazine recipe – Cauliflower, Goat Cheese & Chicken Ramekins from the June 2012 issue.  This dish is supposed to be prepared in individual ramekins, but I don’t have any of those, so I just cooked it all in a casserole dish.  It took a little longer than the recipe said it would, but it was worth the wait…this was another hit! 
cauliflower goat cheese chicken It was also a super easy recipe.  Basically you chop everything up, mix in a few things and throw it in the oven.  I am too lazy to type out the recipe, so I took a picture of it from my digital edition on my iPad.
CGC recipeThe chicken wasn’t quite cooked after 30 minutes at 375, so I cranked it up to 450 and gave it another 15 minutes or so. 

While the dish was baking, I had just enough time to squeeze in a workout.  (I love when recipes give me enough time to workout while they simmer or bake or whatever!)  I hit the Fitness Blender website and looked through the workouts.  In the end, I settled on a 25 minute “Red Light Green Light Workout – Glutes, Abs, and Cardio Workout”.  This was as series of 2 minute exercises with random intervals of work and rest. If it works, here’s the video (why can I not get the actual video to insert…ugh…it is driving me crazy!  For some reason the plug in isn’t working)  Anyways, here is the link to it  It’s a neat concept with the red light/green light thing…you go hard for however long it might be and then get a short break.  I liked it.  In the end, my 25 minutes of work resulted in this:
green light red light polarThis was not quite the level of calorie burn they said this workout should achieve (201-306 estimated by the Fitness Burner people), but again, it was better than what I would have burned had I just sat on the couch while dinner cooked, so it’s all good.

Today I did something that I can’t really believe.  I think I must be a bit crazy, because I voluntarily (with a little encouragement from my sister) signed up for the Goodlife Toronto Half Marathon on May 5. 
goodlife reg confirmation I guess deep down I must really like running, otherwise I might actually be crazy to keep torturing myself like this!  I suppose this means I better get my butt back out there a couple of times a week to be ready to start training hard in a month or so.  I need to find a training program.  I will either find something online, or I might use the schedule my friend Kathy created for me for the Niagara Half I ran last October, but maybe shorten it a bit, so I’m not so sick of running by the time the race actually gets here. 

And finally, I have been asked for the recipe for the Spicy Corn Chowder that I made yesterday.  It really was good, and very easy to prepare.  Again, I’m lazy, so here’s a picture of the recipe taken from a screen shot of my Zinio copy.  I discovered that the recipe was in the Comfort Foods magazine as well as the new Clean Eating 3 Cookbook. it is.  I hope you give it a try.

Goodbye Weekend

The weekend is almost over. While it was a very good weekend, I’m not sorry it’s over. I ate so many bad things, it’s not funny.

Saturday alone, according to MyFitnessPal, I ate and drank 3447 calories…a mere 2247 OVER my recommended calorie intake! Isn’t that INSANE!!!

Today was slightly better…after a lunch that was less than ideal:

My dinner was MUCH better….delicious and clean! Spaghetti squash with chicken and pears.

This dish was from the November/December 2012 issue of Clean Eating magazine. It was easy to prepare and tasted great. I was so happy to be eating something so tasty and clean, instead of more fast food and restaurant food. There was enough left for 2 lunches, so I will eat well at work the next few days too.

I’ve also got some great meals planned for the upcoming week as well. Dinners for the week (and hopefully a few producing leftovers for lunch) include:

  • Cauliflower, goat cheese & chicken ramekins
  • Curried chicken with apples and pears
  • Spicy corn chowder
  • Spiced spinach and chickpeas
  • Mustard chicken
  • I’m continuing to read my kettlebell books and I’m excited to get started on my kettlebell program. I haven’t got it all planned out yet, so this week I will probably do workouts from Fitness Blender and some of my old Bob Harper circuits. I also hope to get out for a few more walks, either during my lunch break at work or in the evenings at home. After the weekend I had, I need to be sure I’m active with some form of exercise everyday.

    I’m never really excited when a weekend is over, but I’m kind of glad that this one is soon to be behind me.

    The Friday Five – Saturday Edition

    Happy weekend! Welcome to the Friday Saturday Five!

    This slightly late post is coming to you from a hotel room in London, Ontario. We are here with my little guy’s hockey team for a tournament. Without further delay, here’s this week’s Five!

    1. I love watching my little guy play hockey. He has the biggest love of the game and puts his whole heart into every shift. Here he is before the first me the “Come on mom, enough with taking pictures of me for your blog” face.

    And here’s a picture from game 2 of him in the penalty box! He got his first penalty ever for being a little too aggressive when going for the puck in the corner. He was charged with a roughing penalty and when he got called he did that “who me” gesture. It was priceless. The picture is not very good as it was taken with my iPhone from across the rink, but there he is, all alone, in the “sin bin”.

    He was quite proud of his penalty. It makes me laugh because he is so not that kind of player. Although, since his team was shut out that game, at least he made it to the scoresheet!

    2. My food consumption the last two days has been less than ideal. And I’m not talking just a little less, I’m taking just about as far away from clean as you can get! Three meals a day in restaurants is not good. The healthiest thing I have eaten so far this weekend was a Sonoma Chicken Salad from Kelsey’s for lunch yesterday. The worst thing that I had is, by far, this morning’s breakfast. OH. MY. GOD. It was bad…and I mean BAD!

    Seriously, that coupled with the Starbucks Grande Non-fat no water Chai I had with it, and I had pretty much consumed my entire allotment of calories for the whole day by 9:30 this morning. While it was quite tasty (seriously those damn Cinnabons are sooooooo good) I didn’t enjoy it nearly as much as I could have since every bite I just kept thinking about all those calories, grams of fat and sugar! I probably shouldn’t have looked up the nutritional info on MFP until after I ate it! Oh well. It will be a long time before I eat one of those things again!

    3. GO LEAFS GO!. At long last, the NHL season finally kicks off tonight.

    The Leafs (my team) are starting their season with an away game against the Montreal Canadiens. I will be watching this game with other families from the hockey team. We didn’t advance to play tomorrow, but some families decided to stay over tonight anyways. We’ve got a private room with its own TV booked at Kelsey’s (which is right next door to the hotel). So, I’m sure I will continue my filthy food habits and have beer and chicken wings or nachos while I watch the game!

    4. I am obsessed with kettlebells. I have been looking online and various websites and I’ve found a couple of books from the library’s digital collection that deal with kettlebells and a few specifically kettlebells for women. I am reading like crazy and I think I am going to build a workout schedule that has me “swinging” 3 days a week. I’ve read so many stories about how adding adding kettlebell workouts and eating clean has transformed people’s bodies. I’m talking significant weightless of 100 pounds or more. I only want to lose 5-10 pounds, but I’m very interested in changing the shape of my body. From what I’ve read, kettlebell swings are the perfect exercise as they engage the whole body, burn fat like crazy, and tone muscles, all with very short but intense workouts. So, I’m going to keep reading and come up with a plan. I can’t wait to get swinging!


    5. After the food weekend I’ve had, I need to get right back into Clean Eating BIG TIME. I need to just accept the fact that this weekend was an eating disaster and let it go. I have all my Clean Eating magazines on my iPad, so I will take some time on the drive home tomorrow to plan my meals for the week. Then I need to get groceries and stick to the plan.

    Hopefully for tomorrow’s post I will have an awesome meal and workout plan for the week. Wish me luck!

    A BRUTAL Day

    Today was a brutally long day.

    I was up at 6:40am…out the door at 7:20 to drive kids to school…dropped them off at school at 8:15 and was at my desk working by 8:30.

    I ate three meals at my desk today. BRUTAL.
    Breakfast: toasted whole wheat bagel with light cream cheese
    Lunch: leftover Clean Eating Chicken & Zucchini Alfredo Toss
    Dinner: leftover SixSistersStuff Slow Cooker Honey Sesame Chicken.

    Most days I eat 2 meals at my desk (breakfast and lunch), but today I had the third there too. I had a meeting at my son’s school about the transition from Grade 8 into High School. The meeting was at 7:30pm and it just didn’t make sense to drive all the way home only to turn around and drive all the way back down. So, I spent a total of 10.5 hours at my desk today…ugh.

    I did manage to get out for a little walk at lunch. I had a brutal morning and needed a break for a bit. But since I bring my lunch and eat at my desk and just keep working through while I eat, I don’t really get a break. Today, after the insanity and frustration of the morning, I needed a real break.

    Since I knew I was going to be at work late and home late, I decided to put on my sneakers and go for a walk. I was pretty sure it would be the only exercise I would get today (I was right…).

    So, 3.23km and 31 minutes later, I was rosy cheeked, refreshed and ready to face my afternoon.


    I actually had a productive afternoon, enjoyed dinner at my desk, found a few digital books online, and then headed to the school for the meeting. It’s hard to believe our guy will be in high school next year. It seems like just yesterday he was heading off for his first at of kindergarten. Where has the time gone! For now, we will just try to survive grade 8!

    After the meeting, I got home shortly after 9pm. Long day. I’m glad I walked at lunch, because when I go home, all I wanted to do was change into my comfies and hit the couch….so that’s exactly what I did!

    Tomorrow should be a regular day and I’m looking forward to coming home and cooking something yummy after work. I know I have something planned, but at this point I can’t remember what it is. Some sort of pasta with chicken and pears. Whatever it is, I’m sure it will be yummy!

    I’m Sore!

    I woke up today and immediately had an internal debate about what tonight’s workout should be.  I knew I had a meeting after work, so would be getting home a little later than usual, and I was trying to think of something quick and intense that would get me sweating a burning those calories but not take up too much time.  I was thinking about a Bob Harper circuit…And then I got out of bed!  Oh…my…god.  My legs were killing me! 

    I knew they were hurting during my workout on Sunday (which was only yesterday…it feels like so long ago!) when I did the Bob Harper Tabata with jump lunges and air squats, but I didn’t think they would be so sore today.  It hurt for my purse to touch my quads when I walked. 

    Taking all of this into consideration…I decided to make today a rest day.  I read somewhere that proper rest is important in weight training.  Of course, I have searched all of my usual twitter sources, fitness blogs, and websites that I regularly visit, and now can’t find the one great article that really hit home with rest and recovery.  Regardless, I think my muscles need rest…and I’m really not sure I could have done a proper workout feeling like this.

    This doesn’t mean I didn’t get any exercise, I just didn’t do a weight workout.  After dinner we needed to go up to Shopper’s Drug Mart to pick up our new passports from their mail depot.  Normally we would have driven, but tonight I convinced hubs we should walk. 

    We laced up our shoes, bundled up, and a short 36 minutes and 3.46km later, we were back home, new passports in hand.  Now I could sit on the couch, watch some TV and not feel too guilty about it, since I did burn a few calories on our walk.

    Tonight was a great TV night.  How I Met Your Mother, House of Lies, and Californication – 3 of our favourites.  I thought Californication was going to be on last night…but apparently here in Canada we get it the day after it runs in the US…so I had to wait until tonight to get my Hank Moody fix.  That show is insane and it makes me shake my head about how messed up all the people on that show are.  Quality entertainment for sure! 

    Now, as has become my typical posting style…it is late, I’m exhausted, and I need to go to bed!  When am I going to learn and get myself to bed at a more reasonable hour? Ugh…

    The Friday Five

    Welcome to another edition of the Friday Five.

    Here’s what’s shaking in my world!

    1. I am super excited….the new season of Californication starts Sunday!   I love David Duchovny, who plays Hank Moody, the main character. When we last saw Hank, his crazy ex-girlfriend had just drugged him and left him for dead.  Can’t wait to see how he gets out of that one!

    2.  I am taking today as a workout rest day.  I have worked out every day in January (with the exception of New Year’s day) and I am tired and achy.  Plus, I think my muscles deserve a break.  They have been working hard the last 10 days!

    3.  I am loving my Polar FT40 Heart Rate monitor.  It is easy to use and comfortable to wear….both watch and monitor strap.  I love knowing how many calories I have burned doing a workout.

    I am going to have to read the manual or look up some instructions online as to how to get more out of it.  I’ve seen other people’s pictures with some interesting screens – showing whether it is fitness or fat burning heart rate zones, and something called effect…which I think is how many calories you burn after your workout.  Hopefully I will get a chance sometime this weekend to do some investigation and figure out how to use this super cool thing!

    4.  I love KenKen puzzles.  At work, we get the Globe & Mail newspaper and one of my colleagues every day, will make a copy of the puzzle page with the cryptic crossword, the Sudoku, and the KenKen.  I used to just to the Sudoku (once I finally figured out how to do them!), but just recently I started to give the KenKen a try.  kenkenTo solve a KenKen, each row and each column will contain the numbers 1 to 6 without repeating.  The numbers within the heavily outlined boxes (cages) combine using the operation given, in any order, to the target number in the cage.  Freebies are the single box cells where the number to be put in the cell is given.

    For the longest time, I could not figure out how to solve these things.  Now that I have figured out how to solve these puzzles, I am addicted!  I love these stupid little puzzles.  I actually had a really big stack of old Sudoku puzzles that have built up since I was too busy to actually do the Sudoku, and now I’ve gone through them all and finished the KenKen.  It is a quick, fun, nice little mental challenge…and I’m hooked.  If you’ve never done one, give them a try.  Apparently they are good exercise for your brain!  Check out for some tips and tons of puzzles.

    5.  I am getting tired of water.  I have given up drinking diet pop as part of my January goals.  So far, any time I want a pop, I have a glass of water.  I’ve been drinking a ton of water..not just to replace my pop, but drinking lots in general.  All of this water is starting to get a bit dull.  I’m getting a little lot tired of water.  I’ve put some Mio in it a couple of times to give it a bit of flavour, but I think I need to find some other substitutes.  I am going to look into some sort of club soda drink or maybe some flavoured Perrier or something.  Anything to keep me hydrated and off the diet pop.

    Totally Random Tuesday

    Ola peeps!  How has Tuesday been treating you so far?  I had a pretty good day.  Here are a few things that have been going on in my world today.

    1.  I recently discovered a great fitness and workout site online that has a kinds of awesome workout videos. is amazing!  Today on their facebook page, they posted a 15 minute kettlebell workout.  After work, when I got home I went straight upstairs, changed into my workout gear, did a quick 5 minute warm up…and hit play on this video (if anyone knows how to get a YouTube video to insert into a post written in Windows Live Writer, please let me know…it never works for me and I have to resort to putting in a hyperlink???)
    This was a nice quick workout, and a short 16 minutes later, I had this result:

    2. After the quickie workout, I had about half an hour until I needed to go see my massage therapist for my regular every 3 week massage.  I love massages.  They are awesome, and I really needed it today as I was feeling my workout from yesterday.   My shoulders, triceps, glutes and hammies were all feeling it today.  And I love that!  Because you know what they say…

    3.  I am on day 7 with no diet soda.  One of my goals for January was to stop drinking diet pop.  I have been drinking water like mad and only really had one day (yesterday) when I was very tempted to have a pop at work.  Instead, I had another glass of water and an apple.  The apple hit the spot and my pop craving went away.  I know that diet soda is not good for me.  A little search on “the Google” and found this…which just reinforces my decision to stop drinking diet pop.

    A 46 Minute Ass Kicking

    It’s late and I’m exhausted, so this is going to be short and sweet.

    I was on track with my eating today.  Healthy snacks at work, drank lots of water, and then came home to make a delicious Clean Eating Mexican Lasagna.  Oh.My.God.  It is so good!!!

    This will give me lunch for tomorrow and we will probably have it for dinner again tomorrow.  This is awesome, but will push tomorrow’s planned crock pot Sante Fe Chicken to Wednesday.  There’s no sense in wasting these yummy meals or cooking if I don’t have to.  It will actually work out perfectly, since I have a massage at 6:45 tomorrow night, so not having to cook from scratch will make tomorrow night a lot less chaotic for me.

    After dinner, I did this killer workout from Fitness Cheerleader.
    saturday workout results Wow!  This workout was killer.  I had to stop and catch my breath a few times and totally wanted to cut it short, but in the end I did 3 full rounds of both cardio and strength circuits.  I am pretty happy with the results.  269 calories with 39% from fat…I’ll take that!

    After my workout, all I had the energy to do was sit on the couch and watch TV.  I wanted to watch The Biggest Loser, but instead hubs and I watched the season premiere of Mr. D.  We like Gerry Dee and like the show.  It was a pretty good episode.  We watched it on PVR, and it finished just in time for me to catch the very end of The Biggest Loser when Nate was getting weighed in.  I can’t believe he only lost 5 pounds…so sad.  He seems to have done well while at home.  I will have to see if I can find the episode online tomorrow at lunch and see how many people cried and got kicked out of the gym this show!  Jillian scares the shit out of me!

    Looking Ahead to a Great Week

    Today was a lazy day, but I still got quite a bit accomplished!

    The day started fairly early at the rink watching my son’s hockey game.  They played well, but in the end, lost 3-2. 

    After the hockey game, I came home and treated myself to a little nap.  I was just so tired, and really didn’t have too much to do today, so just crawled back under the covers for an hour or so.  I woke up feeling a bit more rested.  I really need to do a better job of going to bed earlier.   I’m tired of being tired!

    This afternoon I put all the Christmas decorations away and got the tree out of the house.  The thing shed like crazy and there were needles all over the place.  I was kind of surprised it didn’t just crumble to bits and pieces when I moved it.  Apparently we weren’t the best with watering it! 

    After finishing up with the Christmas stuff, I flipped through my Zinio editions of Clean Eating magazine, and got to work on my meal planning for the week.  I’m not sure why, but I chose the Comfort Foods edition as my starting place, and didn’t get past that edition!  I found 3 fantastic recipes to include on this week’s menu:

      1. Mexican Lasagne
      2. Chicken & Zucchini Alfredo
      3. Hearty Sausage & Cheese Frittata

    I also have a crock pot recipe from that will be part of the menu:  Crock Pot Sante Fe Chicken. 

    I’m looking forward to eating well this week…and of course, cooking clean will result in lots of leftovers, which means I will be eating well at lunch-time this week too!

    Along with my meals, I also planned my workouts for the week.  I’ve got a combination of workouts and workouts scheduled, as well as my weekly hockey game.

    Tonight, after doing groceries and getting the kids started with showers and on their way to bed, hubs and I went for another walk around the neighbourhood.  It was a nice night and I covered another 3.22km.  Hubs back was bugging him, so he bailed around 2k and I did the last bit on my own.  Unfortunately my phone died before I made it all the way back home, but I know the total distance since it’s the exact same route I did last time.

    jan 6 walk breakdown Seems like I really picked up the pace once hubby bailed on me!  I’m enjoying these walks, so hopefully I can keep them as part of my regular fitness routine.

    Now, it is WAY later than I had intended to be finishing this post.  But…I got side tracked watching the season premiere of The Biggest Loser.  I’m looking forward to following the contestants as they go through their weight loss journeys.  I’m loving that Bob and Jillian are back…I actually never watched the seasons that they weren’t on.  I forgot how much people cry on this show…although I’m pretty sure Jillian would make me cry too!  MyTrainerBob is awesome….I love his website and workouts, so I’m looking forward to seeing how he motivates his team.
